In the case of gmirror, no, you won't be able to expand the RAID. There is no such functionality. Only a backup of all data, then splitting the array into RAID10, then returning all data from the backup.
You can switch to ZFS, where you can expand ZMIRROR by adding mirrors.

No. Moreover, here, in general, the storage of information is completely reorganized when moving from 1 to 10.
And in general, I don’t recall that any reconfiguration of the raid allows you to save data right during the reconfiguration.
