Is it possible to put windows on the terminal?

Good evening!! I wanted to make a self-service terminal for printing office paper. There was a security issue. The terminal is based on windows and according to the plan every day reads documents from 200 user flash drives, and of course there are flash drives with malicious programs (viruses, worms). After that, a dangerous threat looms. Is it possible to protect yourself from infection without using antiviruses? I will say right away that it is impossible to install a *nix system, since there is no suitable software for working with *.doc/*.docx files under it.

You can:
1) Install an antivirus (and I see no reason why not).
2) Disable autoload flash drives.
3) Through the GPO, prohibit the execution of any files, except from the Program Files and Windows folders.
4) Put a custom shell that simply will not display "unnecessary" file extensions.
