Is it possible to make a "desktop" on a purchased server?

Is it possible to create a full-fledged analogue of OS on the server? With a desktop so that you can connect through the teamviewer and work there?
ps this is necessary, for example, to download a file at a very low speed, launch a torrent or browser so that you can turn off your computer, and on the server the file is slowly but surely downloaded for 3-4 days.
Under the torrent, I suspect any program, even downloading the onion (tor) browser

Of course, you can, especially since there is a static IP.
For servers on UNIX I use VNC Viewer, for Windows - regular remote desktop (RDP), if it's slow then connect the Internet via cable instead of Wi-Fi, although RDP is very fast.

Can. OVH also has ready-made systems with x2go that roll up and work, you can install pure Debian / Ubuntu and install x2go.
I recommend x2go, it works better than vnc over the network.
I myself use the server at OVH with x2go as a spare desktop.
