Is it possible to somehow receive a notification using a bot, for example, that as soon as a user subscribes to my channel, then a notification comes with the username of the subscriber?

Unfortunately, it is not possible for API bots to get a list of channel subscribers. You can implement a connection through the MTProto
binary protocol , on the basis of which telegram works and get any data you want, but this is extremely difficult and, alas, I won’t tell you exactly how to implement it.
