Even if you close your eyes to some tools in ms office itself (almost certainly tied to a bunch of fictitious and not very technologies from MS, which will ultimately result in serious investments and changes in the infrastructure), then you can offer a stupid solution:
* web server for the duration of the 'editing session document' generates a link of the form \\ip_samba_server\share\path_generated_at_session_time\edited_file
* and the office opens and edits this file
, you just need to fuss a bit so that the link is sent to the office without downloading the document.
