Is it possible to create a jar file on an old version project?

There is a course project written in JAVAFX 11.0.2 and JDK 11.0.4. You need to create a jar file on the project. While already JDK 17.0.1. I tried to create a file in Java 11, but it does not work. What is the correct way to build a project so that it runs on any version of Java?
