If there are enough legs for displays - why not? Or if there is I2C and there can be three devices on one bus. In general, without specifics - guessing on the coffee grounds.

ASUS EZLink connects via USB.
If you find a good USB hub, you can make as many screens as you want, but I don't know about EZLink support in Linux
