Faced with one payment system, which sucks protects the transmitted data. In fact, only IP comparisons offer to limit security. Hence the question - how realistic is it to change the IP to indicate a specific IP?

Not safe. IP is substituted elementary. There, of course, there are associated routing problems, but depending on the type of attack, they are bypassed.

In principle, it is quite realistic - you need to hack your server and use it as a proxy. So if you come up with some other protection, for example, using api keys, then they can also be obtained by hacking your server. Even easier than ip - no need to elevate the rights to root - just read the data available to the server.
Yes - protection only by comparing IP is not the most technologically advanced and reliable. But everything else is even less reliable. Moreover, all the rest cannot be strengthened by IP protection.

Yes, there is another way - to hack the payment system itself, but then again - then the IP will not need to be replaced either.

Unrealistic if you mean the network address. You can change something - the tyrnet will stop working :) If you mean a parameter in the payment system, it depends on the payment system.
