ты это можешь сам настроить. во всяком случае во всех популярных сервисах типа mail, gmail, yandex и т.д. в настройках почтового ящика есть пункт где можно скрыть свои ФИО от получаетелей.

В последнее время даже без мобильного телефона мало где зарегистрируешься. Если беспокоишься об анонимности - ее уже давно не существует. Тыкать каждому свои настоящие ФИО необязательно, но и прятаться смысла нет. Всем все равно, а кому нет - найдут и так.
Если почта официальная, то однозначно - ФИО
