I understand that for some reason in the design of the mobile application, they may not be allowed in the App Store. For example, what must be in the guide, and what is not?
These rules apply to hybrid applications, but perhaps these rules do not exist as such?
Explain, please. I want to make a slightly different interface from the standard design.
For example, I saw in some applications there is no Status Bar, and in some the font size and positioning are completely different.

The main idea behind guides is to make your app easy to use. If your design changes do not interfere with the perception of the program, then there should be no problems.
