Theoretically, this is possible, but the complexity is comparable to determining the number of a car from its tire marks. That is, there are options, but you will not do it on your own. You will reach the maximum ip of the mail server, but what will it give you? Or even further, get an ip address that is used by 5000 people from some city. What's next? Why do you need ip?

Well, you will recognize the IP of the server from the Galapagos Islands - you can see it in the header of the letter, as well as in the logs, if the server is yours - so what? These islands belong to the state of Ecuador - will you go to the Ecuadorian embassy?
And even if Vasya turned out to be fantastically stupid and sent spam from his own computer - well, you will find out the IP of the city of Zapindyurinsk, through whose NAT half of this city goes - then what? The provider will not show you the logs, only at the request of the court (well, or by a very good acquaintance).
