In your opinion, is the most secure option for setting up a public mail server on a postfix + dovecot bundle?

There is a postfix + dovecot bundle, currently open: port 25 for mta-mta, 587 for smtp with starttls, 993 for imap with starttls. What else can be done? What is generally considered the standard at the moment? What will happen if you cut off starttls i.e. only allow tls at once?
And should I use SCRAM-SHA-1 for imap-login?
