In which section or sections of nginx.conf do you need to write logs and what level of logging is better to set?

In the one in which it is more convenient for the administrator.
I have my own access / error.log for each server, and in certain cases even for specific locations.
It is more convenient for someone to pile everything into one file for everyone.
So the question is not very correct.
