In which channel does GA record user clicks from email?
As I understand it, GA is not able to automatically determine - without UTM tags - traffic from a channel like email (unlike organic search, referrals, direct, social). The question is, in which channel does it put this traffic? How to separate it from other traffic?

If email traffic is not tagged, then it falls into the referral channel. You can segment by source, usually the mail host is unique for the service (mail.google.com, mail.yandex.ru).
Use UTM markup, this will help to avoid a lot of misunderstandings with analytics.
At the end of each link, add "&utm_source=email" - and you will clearly see the source, there is nothing complicated and it will be enough for you to start. When just the source is not enough, add new parameters to the utm markup.
