How to use webpack for a finished project?

The question is simple, but I can't decide... I'm creating a project. I upload it to production via git-deploy. In a project to collect SCSS, JS files, I use webpack.
Tell me how to do it correctly:
- Every time they generate minified CSS, JS files on the development environment and upload their result to git?
- or run webpack already on the production server?
