How to use the field in bitrix email templates?

I need to add a field (track number) to the mail template, I added it to the types of mail events , now how can I make some fields for the order so that the administrator can insert the track number in advance and change the status of the order, after which the message will be sent
Or how will it be done more correctly? I just don't have any thoughts.
