How to update repositories from github?

Hello.
On the local PC, I have a directory with software, the plugins inside of which are in separate folders and their new versions are periodically released on github.
Tell me, is it possible to centrally update files selectively so as not to overwrite the plugin config in these directories?
Now I manually download the new version of the plugin and put all the files in its local folder, except for the config. And so for each individual plugin, and there are dozens of them :(
