How to untie a domain from VDS/VPS?

I bought VDS on OVH hosting, put my website on it.

The host name that gave the hosting is attached to the VDS.

Correctly configure the default Virtual Host in the settings of the web server that serves your site.
This is a host that accepts all requests to your ip address and which apparently you have one at all - most likely you have not created a separate one for your site.
Or add a separate Virtual Host with a DNS name that you painted over and then everything depends on your imagination - a stub page, 404, a redirect somewhere.
