How to type up html emails?

Hello ! I would be very grateful if you help me!
I was given a task to work, to compose several e-mail letters using html. I came across a couple of lessons where letters are typed without tables, but they use only some tags that are adequately displayed in mail clients. But also on the Internet there is a lot of information about what needs to be typeset with tables, to simplify this, they use ZURB FOUNDATION. And that's all you need to configure through Gulp. Please tell me if I can type letters without tables and how adequately they will be displayed in clients. Accordingly, all letters must be adaptive.
