How to transfer the site to another hosting so that mail does not fly?

We have domain mail (we serve in gmail).
As I understand it, you need to do this:
1) Bind the new hosting to the domain via ns 2) Bind the domain in the
new hosting and write mx there (what gmail requests)
3) Transfer our site to the new hosting
4) Everything works. Prize to all))))
Is everything correct?
The director is afraid that all information from the mail will fly off (letters will be deleted), or that the letters will stop coming.

Yes, everything is so - but the design as a whole with the use of hoster's ns-servers is flawed.
At least 4 hours until the zones are updated, nothing will work for you.
It is correct to do so:
Use two (Primary and Secondary) dns-hosting. Write what you need there. In the future, when changing the hoster, you only change the ip in the A record of the domain and everything will start working in a maximum of 15 minutes. And the mail (given that you have through gmail and you don’t need to change anything, respectively) as it worked and will continue to work.
