Usually I make sites on bootstrap and just customize the template for mobile phones. Here the question arose, what is the plus when sites are redirected to m.site.com? Is it worth it now, and most importantly, how is it done?

The advantage is that in the regular version, which is adaptive, sometimes there is too much text designed for large screens, don’t fold such a page - it still looks redundant on mobile.
It depends on the project, on one project I did this, on the rest I did not. You can also not redirect to m.site.com, but simply replace the page with a mobile one on the same site.com
