Usually databases are copied: options + attributes + brands + products + categories.
If the stores are not too different, then this is usually enough.
If there are many modules installed that require their own fields in the table, then you must manually identify and copy each column that is missing.
If it's Ocstore, then it also has its own fields in products and categories, they need to be transferred.
