in the BP editor, in the "Condition" block, you need to track the removal (not a change in status) of the deal card and then perform a series of actions.
It will not work to use the “Document Field” condition type, from there you can pull out the change of the stage as much as possible. There is also a condition with PHP code and a hint of using the onCrmDealDelete REST API parameter, but how to use them from the wiki is not clear.
I ask you to tell me in which direction to dig, are there any alternative solutions?

Why delete the deal? this is not provided by the logic of the system, as far as I remember
