How to test and develop without product data?
There is some kind of case that occurs on specific data. A support request came in, localized it on the stage, for example, do you have any idea why this is happening, how to continue this business throughout the entire development cycle? How do developers/QA check that the guesses are correct and the problem is gone, without a product base?
Update 1
That is, while the picture is emerging of dragging depersonalized sales data of the minimum size to the stands, in fact, it looks something like this now, but this naturally imposes certain management costs and inflates the infrastructure. Any alternatives are interesting: how do teams go through such cases without the possibility of developing / testing on product data? What changes in the processes are needed for this? Is it possible?

The product base is usually cut to 10%, or to a reasonable limit.
Then they look at the metrics where the problem is, model it by clamping the desired parameter.
Then they run the test script and catch it at the breakpoints exactly where something happened according to the metrics.
But in general, this is of course an experience when you, without logs, remembering what you changed, make assumptions
