How to teach Arduino to recognize sounds in the apartment (microwave, washing machine, intercom, doorbell, etc. specific and clear) and close certain relays? A deaf person at home does not like to wear a hearing aid. I want to do something, like, the intercom rang - the blue ice flashes, the microwave chirped - the red blinked. Take speech recognition projects and simplify?

Isn't it easier to just "solder" to the indication? We connect the optocoupler to the LED or sound indication and bring the terminals out of it. It's easier and faster. You can build an ESP8266 into each device so as not to pull the wires.
It will be more difficult to recognize sounds by an order of magnitude than to read the indication of the device.
The sound is written to the buffer, with a splash, a fragment is selected and sent for recognition by the neural network. Neural networks are a slightly different level than just soldering wires.
