How to switch from one Windows to another?

Good day to all!
It is necessary to switch from Windows Server 2012 R2 to Windows Server 2019 due to increased functionality, but there are several problems:
1. Not a very nice graphical interface.

Windows Server 2012 R2 Taskbar

Windows Server 2019 taskbar

How to bring back the old taskbar in the new Windows Server 2019?
2. How to export Active Directory, LDAP, IIS, RDS settings and import them back into the system after a complete reinstallation?
How to solve the above questions?! Please help please!!!
Thank you all in advance for your replies!

@Tabletko

1. Get used to it
2.0 make a backup
2.1 deploy a second server/servers nearby
2.2 migrate roles and load
2.3 ...
2.3.1 if (error==true) then restore from backup;
2.4 profit.

@SignFinder

AD doesn't migrate like that. Deploy a separate domain controller and decommission the old one.
Can use virtual on the same machine via Hyper-V
