How to set up mail on Windows Server 2008?

There is a network consisting of a slave server on Windows Server 2008, two users on Win XP. All virtual machines. You need to set up email. That is, users can exchange mail via Outlook through this slave server.
From the current one: a network between machines is configured, a domain is configured from which users can download certificates. Available roles on the server: DNS Server, Web Server(IIS), Active Directory Domain Services, Certificate Services, File Services.
I apologize in advance for the possibly very rough wording of the task, but it is a universal one, and apart from "setting up mail on the servers" nothing more was said.
I would like to hear a step-by-step process for installing the necessary components / programs (at least which of these is needed), what to enable / disable in advance, etc.
