How to set default script to open file in Ubuntu 18.04 on Gnome GUI?

This was in earlier versions of Gnome.

you can simply create an application shortcut where, among other things, specify the path to your script in the Exec variable, then add the 'shortcut' to the desired folder (/usr/share/applications or /usr/local/share/applications or for the current user ~/.local /share/applications)
After that, this shortcut will be added to the selection of programs to run
