Actually, it's not about the OS, it delegates the choice of resolution to the driver written for specific hardware for this OS. It contains all the resolutions (together with the frame rate) available to this "video adapter + screen" bundle. In the "Screen Settings" you can observe how, when changing the adapter or screen, the values of available resolutions and frame rates change as soon as a new driver is pulled up.
If you bought a screen that allows 2560x1080, then you had to take care to choose the appropriate video adapter for it. Appropriate - this means that in the list of available resolutions of the driver, among others, 2560x1080 must be present. If there is no 2560x1080, then it is not good, and must be replaced (if bought recently, then returned under warranty). You yourself, even as a driver programmer, cannot enter the parameter you need there, since it does not fit from the bullshit, but in accordance with the capabilities of the hardware (if this were not the case, then we could enter any resolution for any adapter). And there is no need for this, because if the hardware allows, the permission you need is already on the list.
