How to save data from HealthKit?
As far as I know, programs that work with HealthKit cannot store data taken from the framework. They can only show, build graphs, etc.
How to backup or dump a HealthKit database from an iOS device?
No jailbreak yet, but I'll consider all options.

Health.app -> Meddata -> All -> at the top is the export button for all data.
Sends xml via Mail.app
