How to run a process from an old version of Java in Ubuntu?

The machine is running Java 7 and 8. By default, everything works on the 8th. There is an application that only works with an older version of Java. On Windows, I solved the problem by adding -version:1.7 to the startup line. Immediately swears at this: Error: Unable to locate JRE meeting specification "1.7". I tried to specify "1.7.0_121-b00" instead of 1.7 - nothing has changed. Switching to the correct version in update-alternatives --config java certainly helps, but I don't need such a global solution.
Please help with an example of a launch line so that each process can choose its own version of Java.

Make links to binaries of different versions with different names in a directory located in $PATH.
