How to remove all php on macos machine?

I can't replace it with another version of php. I do it through homebrew and it still doesn't work. Used this article https://freek.dev/966-how-to-upgrade-from-php-71-t... It doesn't help. It installs in /usr/local/Cellar/ I see one php but how can we apply or override it
