How to properly organize the assembly and pulling on the project engine?

After layout, I assemble the project in a gallop, and at the output I get a minified js css . After I pull the layout on WP. Quite often it happens that somewhere some element is not displayed as planned and you have to change the styles and re-minify the code.
When compiling SCSS, should I specify two paths for the minified code, a folder with the gulp project and a folder with wp?
Or is it worth changing the whole process somehow?
