The answer to your first question about whether or not to make page editing easier by using a visual editor for the CLIENT is yes. I usually use WPBakery Visual Composer for this. Something I don't like Divi & Elementor (IMHO). Why you should not use custom fields (ACF plugin for example). Sometimes there is a situation when a client needs to add some block or field himself... he will not do this with custom fields, but with visas. will make it an editor.
PS Of course, you can bother and use ACF Pro in Repeater (repeater) to attach Flexible Content (flexible content), and add possible fields with h1-h6 headings, sections, set the background color, set the image for the background, create a block, upload a picture, etc., but this is extra work ... To the question of how best to change the logo and other theme parameters, then it’s already worth creating custom fields. I would use ACF Pro to create a menu item "Theme Options".
