How to merge several nginx logs into one?

nginx is configured, each project has its own log.
It was required to reduce several (only indicated, not all) access logs into one in real time.
How can this be done, but what if the logs would remain separately?

I read the documentation, it is enough to register at the desired server
it's a pity that it doesn't work with error_log.
