How to merge branches through an external server?

Please tell me, I’m looking for an ideal scheme for combining offices, all branches are equivalent, everyone has so-so Internet, everyone works with an external 1C server, everyone has mikrotik rb3011 output and not many users. We would like to see each other, but not necessarily. It is desirable not to proxy non-1C traffic through the server. Is there a silver bullet for this issue?

Each office has its own subnet, between the ticks of a vpnka for every taste, wrap the traffic with ordinary routes on the subnets of each branch, and also taxi the rest of the traffic anywhere you want.

1C has such a concept of URBD. A separate database is created for each branch on a non-local server. And between them I tune in exchanges, any frequency. Exchange data set customizable
