Replace label - https://yandex.ru/dev/maps/jsbox/
Own balloon - https://yandex.ru/dev/maps/jsbox/2.1/balloon_autopan
If the standard one is enough, you can just put arbitrary html inside - https: //yandex.ru/dev/maps/jsbox/2.1/balloon_html
