I want to make it so that it was impossible to change the password through the database, and so through FTP, in the wp-config file, and also it was impossible to restore or back up the file directory, through hosting or on my own server. How to do it? Or what to read?

If there is access to files and databases from the hosting side, protection is useless.
Otherwise - create an additional user for FTP/SSH and limit the rights for this user.
