How to make HTML email?

Hello.
Getting started learning HTML email layout. I came across tutorials from codeschool and these . But I noticed that they make up letters using tables (table layout).
So that's the question ... Is it a scam on the tables to do this ?? Because there are divas, flexes.
PS So far, I want to try without frameworks (like Zurb).
