How to make a separate email template for the desired product category in Bitrix?

I have a special infoblock with products that requires a separate mail template, which is sent to a dedicated manager. Ideally, orders for this category would not be processed by a standard mail template, but this is probably already difficult to do even logically.
Where to start, to at least make just a separate one?
