How to make a separate design for WP?

I have a mobile layout (design / template whatever), I would like to use this display option only for mobile devices, and use the current full-fledged template for desktop (I don’t want to bother converting it into adaptive).

What is the easiest way to implement this? So far, the idea is this - to make two designs on the same engine, determine the device in advance and show the version for the mobile on the subdomain. To what extent is this decision correct?

It's quite possible. I advise you to use the Multi Device Switcher plugin so as not to suffer with a subdomain.
