How to learn to work with VDS?

All my projects are now hosted, but I want to get myself a VDS. The problem is that I don’t know how to manage it and so far I don’t really understand what to read about it and what is generally important to know.
At the very least, I would like to:
- deploy sites conveniently and have all the tools that are needed for them (Apache, Nginx, PHP, MySQL, Redis, MongoDB, NodeJS, ...);
- be able to quickly update versions of dependencies;
— install SSL certificates;
- be able to provide some kind of security and generally have an idea about it;
- in which case, be able to issue access to clients (ftp, ssh, ...) to their sites.
Maybe there should be something else on this list that I haven't considered. The idea is that I don't want to administer servers directly, but I want to be able to do all the basic things and know where to dig in case of problems or needs.

The habit of working with servers through control panels is the first step towards degradation and helplessness. Get used to accessing services directly from the start.

0) Live system on a virtual machine. It is possible with gui at the beginning. One. The difference regarding distributions is usually in the package manager arguments and / or the location of the configs. Foolishly, you can break everything, it's better to practice on cats.
1) Mana to all required software, at least once.
2) To know / hear from a friend / on a toaster / on Habré / try the most optimal cases for using software combinations and how to deploy these cases. The knowledge from the paragraph above, seasoned with Google, is the best assistant.
3) Only after that look at some control panel (webmin/isp manager/thousands of them).
