You definitely need to work in a team. And you need a good team leader.
Most of the problems appear only when the complexity of the project is from a couple of man-years. And until you meet them, you will write code in the Laravel style.
Come up with a bigger project and do it, while Google doesn’t know what.
Courses won't help, come up with a theme for a bigger project and work on it until you're done. It will be hard, but the knowledge will be much better. If you want to learn how to write good, Symfony-way code at the same time, then look for similar implementations on github.
Since you have experience with Magento 1/2 and want to learn Symfony, maybe you should take a look at Sylius ?

And in general, the style of the symphony impresses me. But the scary thing is that bundles are used everywhere, and often they are dependent on each other, and it seems that in order to understand how it all works together, you will have to dig a lot in bundles - and this is not exactly what you want - to speed up development. What is worth only the admin panel ... And apparently there are not so many admin panels - EasyAdminBundle and the monstrous SonataAdminBundle.
