officially no way!
It's still possible to intercept a microphone - an analogue of sound recording from a microphone, a voice recorder. But intercepting sound from the telephone network is almost impossible. There are at least 5-6 options for different TYPES of mobile phones. Most only work as root. Sometimes none of the methods work. It seems that 2 of them are semi-official - there is a Google documentation somewhere, but they did not work for me.
...in short... the task is not for a beginner!
