I'm somehow afraid that you don't have enough disk to even download "everything", let alone install it :-) FreeBSD has about 25 thousand packages, so-and-so :-)
In general, you can download the installation DVD with freya, most of the most popular packages are there - all sorts of web servers, mail servers, X's and all that. Then it will be possible to install it from the disk, without the need to access the Internet. But update, of course, you can not.
