At the time of writing the comment, the history of the transaction and the history of transitions between the stages of the transaction cannot be obtained through the REST Api.
For the boxed version, you can use:
\Bitrix\Crm\History\Entity\DealStageHistoryTable - data mapper for state histories (transitions between stages)
CCrmEvent - for history processing
Bitrix\Crm\Timeline\TimelineEntry - for timeline entries
