How to force media not to go through OPNSIPS?
What methods exist to force SIP traffic to NOT go through opensips, i.e. OPENSIPS handles RTP, and SIP goes from one user to another?

You've got it all mixed up. OpenSIPS just does not process RTP if media-relay is not explicitly attached to it (for example, RTPEngine or RTPProxy or MediaProxy). But the signaling - SIP - just goes through OpenSIPS.
Signaling via OpenSIPS, media (RTP) - directly between users. By default it is. In real life, this behavior is far from always suitable, therefore, for example, RTPEngine is screwed to OpenSIPS.
