How to force git to save all files with permission 755?
Currently, all non-executable files are saved as 644.

You can set up hooks so that the file permissions you want are applied on the git pull event:

#!/bin/bash
cd /home/yourcatalog
sudo chmod -R g+rw subcatalog/*

If necessary, add rights to the group to modify these files:
sudo chown -R :groupname subcatalog/*
