Where to dig? Maybe there is a possibility similar to WordPress hooks?

It all depends on how the emails are sent. There are web form events , there is an event before sending the letter itself (but it will be executed, of course, only if the letter will be sent through this method). And if letters are simply sent via mail() in self-written components, or some other perverted method of sending is used, then, of course, it will not work to hang on them.
