I need that when moving to the next stage of the transaction, the previous specified date and time are erased, and Bitrix asks to enter a new date, but already to go to the next stage of the transaction. I tried to leave the time fields in the document edit empty, but the date is saved and not erased. Is there a way to fix this?

No, there is no way to "fix" this, since there is nothing to "fix" in terms of product architecture.
Do I need to ask for a date for each stage? Make N fields (1 for each status) and request for each state from the description. Those. 10 stages = 10 date fields. There is no other in the cloud and in the standard.
If you have a boxed version, then of course this can be done, but in any case, you need to involve developers.
